Here is what I ate today, so stuff it.
Breakfast: Peppermint Roobios tea and a strawberry vanilla muffin (muffin from Haymarket in Northampton, MA).
Lunch: Quinoa salad with fuji and granny smith apples, walnuts, red onion, and a lemon vinegarette. (Fresh lemon juice, a tiny bit of oil, salt, and a tiny bit of sugar).
Dinner: Vegan Carbonara made with angel hair pasta, black pepper 'mimicreme' cream sauce, nutritional yeast 'cheese', portobello 'bacon' parsley, and baby spinach.
I like to eat. I might just keep writing about that. Sorry I'm terrible at updating.
Quick recipe for portobello 'bacon'
Makes about a 1/3 cup of crumbled 'bacon'.
-2 large portobello caps sliced thinly.
-baking spray or oil
-liquid smoke (optional)
1.) Preheat oven to 400 degrees F.
2.) Put lightly oiled sliced mushrooms on a baking pan. Sprinkle with salt and VERY LITTLE liquid smoke if using.
3.) Bake until crispy, about 20 minutes. Watch after about 10.
4.) Eat as garnish, in sammiches, whatever! Enjoy!
